Pumpkin Spice Madeleines




Ingredients:

- 1 cup granulated sugar
- 1 tbsp Bourbon Vanilla Sugar
- 3 large eggs
- 1 cup melted butter (cooled)
- 1 3/4 cup all-purpose unbleached flour
- 1 tsp baking powder
- 3 tbsp Pumpkin puree
- pinch of salt
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp allspice
- 1/4 tsp nutmeg
- 1/4 tsp cloves


In a mixing bowl combine together sugar, melted butter. Add eggs one at the time,blend in vanilla extract, and pumpkin puree. When it's all well combined, add all dry ingredients (flour, baking powder, spices).

Let sit the batter in the fridge for two hours.

Preheat your oven at 425 degrees F.

Place your Madeleines tray on top of your perforated baking sheet.
Spoon the batter in each wells filling half way. Bake for 6 minutes or until you begin to see a little bump on the Madeleines, then reduce the temperature to 400 F and bake 4 additional minutes or until they have a nice light golden color.
The temperature range between the hot oven and the cold batter will help release the baking powder action, and will create the little bump on the Madeleines. Do not overfill the wells otherwise your Madeleines will be flat.

Let the Madeleines cool.

If you want chocolate covered Madeleines, place into each well about 10 chocolate chips. Put your Madeleines tray back in the oven (turned off, but still hot) for 5 to 10 minutes or until the chocolate is melted. With your silicone pastry brush coat each well with the melted chocolate. Place each Madeleines back on top of the chocolate. Let it set in the fridge for 15 minutes.

You can also just deep them half way in melted chocolate.








Madeleines au potiron et aux épices d'automne


Ingrédients :

- 200 grs de sucre en poudre
- 1 sachet de sucre vanillé et/ou 1 càc d'extrait de vanille 
- 3 gros oeufs
- 125 grs de beurre fondu
- 250 grs de farine
- 1 sachet de levure chimique
- 1 pincée de sel
- 3 cuillères à soupe de purée de potiron
- 1/2 càc de cannelle
- 1/4 càc de gingembre en poudre
- 1/4 càc de noix de muscade
- 1/4 càc de clous de girofle en poudre
- ou 1 càc de 4 épices


Mélanger le sucre et le beurre fondu, puis ajouter les oeufs un par un, l'extrait de vanille et la purée de potiron.Une fois l'obtention d'un mélange bien homogène, ajouter la farine, la levure chimique, le sel, et les épices. Bien mélanger l'appareil, puis le placer au réfrigérateur pendant au moins 2 heures.

Préchauffer le four à 220 C.
Placer le moule à Madeleines sur la plaque de cuisson perforée.
Remplir chaque empreinte à moitié ou maximum au 3/4.
Cuire pendant 6 min à 220 C, ou jusqu’à temps de voir apparaître la bosse, puis baisser le four à 200 C et cuire encore 4 min. Vos Madeleines doivent avoir un bel aspect doré. 
Le choc thermique créé entre la chaleur du four et le froid de l'appareil, permet à la levure chimique de libérer son action en créant cette fameuse bosse.
D’où l'importance d'avoir un four bien chaud et une préparation bien froide.
Ne remplissez pas trop vos empreintes au risque de ne pas avoir cette bosse. Ne soyez donc pas trop gourmand ! ;-)

Laisser refroidir les Madeleines.

Pour obtenir un dos couvert de chocolat, placer un carré de chocolat pâtissier dans chacune des empreintes, et mettre pendant 5 à 10 min le moule au four éteint mais encore suffisamment chaud pour faire fondre le chocolat.
Une fois le chocolat fondu recouvrir chaque empreinte à l'aide d'un pinceau en silicone.
Replacer chaque Madeleines dans son empreinte par-dessus le chocolat, et mettre le moule au réfrigérateur pendant 15 min.

Vous pouvez également tremper vos Madeleines dans un bol de chocolat fondu.

Spider Web Carrot Cake



Few years ago when I lived in New Jersey, I discovered the Carrot Cake. But not an ordinary one, this one is to DIE for! Now I'm addicted, and you'll will be too.

Ingredients:

- 1 cup unbleached flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon (Try the Demarle at Home cinnamon from Spice for life, it's the BEST you've ever tasted)
- 1/2 tsp ground ginger (We also have a great ginger in the Spice for life set)
- 1/4 tsp nutmeg
- 1/8 tsp allspice
- 1/8 tsp clove
- Pinch of salt (Try Demarle at Home Sel gris sea salt)
- 3/4 cup sugar
- 1/2 cup vegetable oil or canola oil
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups shredded carrots
- 1/2 cup crushed pecans 
- 1/2 cup unsweetened shredded coconut
- 1/2 cup  small chocolate chips
- 1/2 cup dried raisins


For the icing:

- 5 oz cream cheese
- 1 cup powdered sugar
-1 tsp vanilla extract
- 1 tbsp milk
- 1/2 cup chocolate


Preheat your oven to 350 F.
Use a 9-inches mold. I use Demarle large round mold,  flower mold, or  bundt cake. Do not use a too big mold.

Put the dried raisins in a bowl filled with warm water.
Mix together the flour, all the spices, salt, baking soda, baking powder,
In a second bowl mix the sugar, oil and vanilla extract, until well combined, then add the eggs, mix well. Add all the other ingredients, and the flour mixture. Use a spatula or a wooden spoon. Do not over mixed.

Pour the batter into your mold and bake it at 350F for 35 min or until a toothpick comes out clean.
Let it cool completely before unmolding.

Prepare the frosting by combining cream cheese, powdered sugar and milk, until it's perfectly smooth.
You can now frost your cake.

Melt the chocolate in the microwave or in a saucepan.
Let it cool a little bit before placing it in a pastry bag or "ziploc". If you use a ziploc bag cut a corner but not more then 2 milimeters.

Find the center of your cake, put a chocolate dot and then draw circles all over the cake. 
To draw the spider web, take a toothpick trace a line starting from center going to the edge, then from the edge to the center and continue on.
And Voila! You have a beautiful carrot cake perfect for Halloween!

Zucchinis Ribbon Tart




Ingredients:


  • 2 large zucchinis
  • 1 large yellow squash
  • 5 carrots
  • 3 packages of 1 oz. prosciutto slices
  • For custard:
  • 2 eggs
  • 1/2 cup heavy cream
  • 1 cup grated gruyere'
  • salt to taste
Preheat oven to 350 degrees.
Cut the puff pastry to to fit the size of the Flexipan Medium Round mold or the Flower mold then pre-bake for 10 minutes at 350 degrees. Cool.
Mix the egg, cream, and cheese then pour over the pastry.
Cut the zucchini, squash, and carrots into strips. You can use a vegetable peeler. Heat a large pot of salted water and prepare a large bowl of ice cold water. Put the sliced vegetables in the boiling water for 10 seconds and then remove from the water with a slotted spoon and put them in the ice water to stop cooking, drain well and dry with paper towels.
Cut the prosciutto in half lengthwise.
Spread four slices of zucchini in lenth. The slices should overlap slightly in length, creating a long strip of zucchini. Cover it with the yellow squash and then cover that with the carrots. Repeat, zucchini, squash, carrot and add the prosciutto. Repeat two more times for 6 layers. Cut if you need to. Then carefully foll the vegetables and ham and place on top of the custard inside the pre-baked puff pastry crust.
Place the rolled vegetables and ham, side up and carefully press. Bake for thirty minutes at 350 degrees.

Tarte Rubans de Courgettes


Ingrédients :

-1 pâte feuilletée
- 2 grosses courgettes ou 4 petites
- 1 grosse courgette jaune
- 5 carottes suffisamment larges pour faire de grandes bandes
- 250 grs de Jambon de Bayonne, ou lard fumé, 
- 2 oeufs
- 120 ml de crème Fleurette
- 100 grs de gruyère râpé



Préchauffez votre four à 180 C.
Étalez votre pâte feuilletée dans un  moule Flexipan d'environ 25 cm de diamètre, (moule fleur, moule rond medium). Faites la précuire à blanc 10 min. Pour éviter que les bords ne s'affaissent à la cuisson vous pouvez l’étaler sur l'envers de votre moule Flexipan.
Ensuite laissez la refroidir.

Préparez un appareil en battant les 2 oeufs avec la crème Fleurette et le gruyère, salez et poivrez. Versez l'appareil sur le fond de tarte.

Découpez des rubans de courgettes et carottes à l'aide d'une mandoline ou d'un économe.
Faites bouillir une large casserole d'eau salée et préparez un saladier d'eau froide avec des glaçons à coté. Placez vos légumes une dizaine de secondes dans l'eau bouillante afin de les faire blanchir, puis arrêtez la cuisson en les plongeant dans votre saladier d'eau froide. Vous pouvez remettre des glaçons afin d'avoir une eau toujours bien froide. Procédez de cette façon pour chacun des légumes en les séparant bien. Egouttez vos légumes et bien les sécher avec de l'essuie-tout afin d’éviter qu'ils ne rendent trop d'eau lors de la cuisson. Cette étape est très importante car les courgettes ont tendance à rendre beaucoup d'eau.

Coupez votre jambon de Bayonne à la moitié dans le sens de la longueur.

Sur votre Roul'pat disposez une bande de 4 rubans de courgettes  en les faisant se chevaucher. Recouvrez les de rubans de courgettes jaunes, puis de carottes, et enfin de jambon de Bayonne. Renouvelez l’opération 5 fois, de sorte à avoir 6 couches de légumes et jambon.
L’étape la plus délicate est celle de l'enroulage de votre mille-feuille de légumes. Pour cette étape une deuxième paire de mains peut vous être utile. Renversez votre mille-feuille sur le coté, ce sera plus facile pour enrouler. Puis formez un gros escargot. Utilisez la spatule exoglass pour délicatement soulever votre escargot de légumes/jambon. Disposez-le au centre de votre tarte, en appuyant légèrement.

Enfournez votre tarte une trentaine de minutes à 180 C.

Flexipan

What is a Flexipan?

Flexipan is a flexible, non-stick bakeware Made in France by Demarle. 
It's unbreakable, no need to grease or spray oil, unmolding is very easy, cleanning too. It gives your cake a nice brown and shiny finished.
It exists different Flexipan, molds and trays. It offers you versatility.

Flexipan molds are perfect for cakes but also for entrees like crustless quiche, frittata, casseroles, cooking meat and more.


Qu'est-ce qu'un Flexipan ?

Un Flexipan est une toile en fil de verre recouverte de silicone, ce qui donne souplesse et anti-adhérence. Inventé en 1989 par Guy Demarle, Flexipan est 100% Made in France (Cocorico!).
Incassable, pas besoin de beurrer ou huiler, démoulage et nettoyage faciles.
Flexipan donne un aspect brillant à vos gâteaux.
Il existe des moules et des empreintes pour faire des préparations individuelles.
Flexipan vous offre une très grande versatilité. 

Les moules Flexipan sont parfaits pour des gâteaux, mais aussi des plats salés.

Flexipan trays are individual size, so they are perfect for controlling portion size. You can do appetizers, entrees, side dish, desserts or snacks in them.

Flexipan molds an trays can be used in a traditional oven (gaz and electric) up to 480 degrees F, but also in microwave and in the freezer.
It is dishwasher safe.

If you have empty wells fill them up with water before cooking. Empty wells will heat up quicker and it can result in an uneven baking.
Just be careful when you take your tray out of the oven, the water will be very hot, so don't burn yourself.


Les moules et empreintes Flexipan peuvent être utilisés dans un four traditionnel (gaz ou électrique), jusqu’à 270 degrés C, mais aussi au micro-onde et au congélateur. Ils peuvent être lavés au lave-vaisselle.

Si vous avez des empreintes vides, remplissez-les d'eau avant de les placer au four. Des empreintes vides vont chauffer plus vite et rendre la cuisson moins homogène. Faites juste attention en sortant vos empreintes du four, l'eau peut être bouillante et vous risqueriez de vous ébouillanter.

Oven-baked Drumsticks

Are you ready for the first recipe of this blog?
Here is a easy recipe for beginers. 
Oven-baked Drumsticks made in the Sunflower mold from Demarle.

Etes-vous prêts pour la 1ere recette de ce blog ?
Voici une recette facile, idéale pour des débutants.
Des cuisses de poulet panées cuites au four dans le moule Tournesol de Demarle. 




Ingredients:

- 6 chicken drumsticks
- 1/2 cup all-purpose flour
- 1/4 tsp garlic powder
- 1/2 tsp paprika
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 cup melted butter

Instead of using paprika you can use curry powder, or our great seasonning blends like Rosemary, Basil & Thyme,  Zesty Mediterranean, Roasted Garlic and Chives, Herbs de Provence.


Pre-heat oven to 425 F

In a bowl mix the flour and all dry ingredients.
Dip chicken drumsticks in melted butter, and roll in the flour mixture to coat.
Place them in a non-stick pan, and bake for 50 minutes or until it's done. In this recipe I used the Sunflower mold, but you can use the large round mold, grande round mold.



Ingrédients :

- 6 cuisses de poulet
- 70 gr de farine
- 1/4 de c à c  d'ail en poudre
- 1/2 c à c de paprika
- sel, poivre
- 50 gr de beurre fondu

A la place du paprika vous pouvez mettre du curry ou autres épices. Je vous conseille les mélanges d'herbes de Demarle at Home: Rosemary, Basil & Thyme,  Zesty MediterraneanRoasted Garlic and ChivesHerbs de Provence.


Préchauffez votre four à 220 C.
Dans un saladier mélangez la farine et les différents assaisonnements.
Plongez les cuisses de poulet dans le beurre fondu, ou utilisez un pinceau pour les recouvrir.
Placez-les dans un moule de préférence anti-adhérent, et faites-les cuire environ 50 minutes.
Pour cette recette j'ai utilisé le moule Tournesol, mais vous pouvez aussi utiliser le moule à génoise.

Silpat

What's a Silpat? / Qu'est-ce que la Silpat ?


A Silpat is a revolutionary non-stick baking mat Made in France by Demarle. It's made of woven glass and food grade silicone. It was invented by Guy Demarle in the 60', and was made for professional. If you're watching Food Network channel you gonna see chefs using it.
The Silpat is even recommended by Martha Stewart: "Bakers' Must-Have".

La Silpat est une toile de pâtisserie révolutionnaire. Sa principale propriété est qu'elle est anti-adhérente. Fabriquée en France par la société Demarle, elle a été inventée par Monsieur Guy Demarle dans les années 1960, à la base c’était pour répondre à un besoin des professionnels. 
Elle est constituée de fibre de verre et de silicone alimentaire.



Use the Silpat to replace parchment paper or aluminum foil to bake cookies, meringues, roast vegetables, cook chicken, fish, french fries and more...
With the Silpat no need to add some oil, nothing sticks on it.
Cleaning is easy breezy with hot soapy water!
Max temperature is 480 F. You can also put the Silpat in the freezer.
When using the Silpat as a cover in the oven or microwave always facing the writing side toward the food.
You can use the octagonal Silpat in microwave.
DO NOT use a knife or sharp ustensil on the Silpat, you could damage it. Only the Demarle at Home cake server knife is safe.
DO NOT use the Silpat on grill.
Silpat may be used for a thousand times, it's not lifetime warranty.

Utilisez la toile Silpat en remplacement du papier sulfurisé ou du papier aluminium pour cuire vos cookies, et autres biscuits sablés, meringues, griller vos légumes, cuire des escalopes de poulet, du poisson, des frites et plus encore...
Avec la Silpat pas besoin de rajouter d'huile, elle est anti-adhérente.
Le nettoyage se fait en un éclair, avec de l'eau chaude savonneuse.
Résiste à une température de 270 C, et -40 C au congélateur.
En cas d'utilisation de la Silpat en couvercle au four ou au micro-onde, toujours diriger la partie écrite en direction des aliments.
Ne pas utiliser de couteau ou d'ustensile tranchant sur la Silpat, vous pourriez l'endommager. Seul le couteau de service Demarle est recommandé.
Ne pas utiliser la Silpat sur votre barbecue.
La Silpat n'est pas garantie à vie, mais vous pouvez en faire plus de 1000 usages.

Welcome! Bienvenue !

Bonjour !

First of all, welcome to my new cooking blog!
Let me introduce myself. I'm Adeline a French mother who followed her husband in a great adventure to California in July 2014. We live in Sacramento, and we love California's weather! So much better than in France. We used to live in Besancon in the East part of France next to Switzerland.

Please excuse me in advance for my English mistakes, it still needs some improvement.





I have been fond of cooking and especially baking since I was a little girl. 
In February 2015, I became an Independent Consultant for Demarle at Home a direct sales company presents in the United States for 12 years.
I discovered Demarle more than 20 years ago, my mom hosted cooking workshops. I have been using those amazing products since then.

A quick historic of Demarle:

"DEMARLE was founded in Northern France in 1965 by M. Guy Demarle. 
Mr. Demarle was an experienced baker who was seeking a better way to make baguette bread with forms using non-stick silicone coatings. He went on to invent the first non-stick baguette baking trays (or filets, as they are known in France). A few years later, Mr. Demarle also went on to invent and create the original Silpat® pastry liner and preformed Silform® mat. In 1985 DEMARLE introduced the revolutionary product known as Flexipan® - a unique line of flexible molds made from fiberglass covered with food silicone.
