Spider Web Carrot Cake



Few years ago when I lived in New Jersey, I discovered the Carrot Cake. But not an ordinary one, this one is to DIE for! Now I'm addicted, and you'll will be too.

Ingredients:

- 1 cup unbleached flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon (Try the Demarle at Home cinnamon from Spice for life, it's the BEST you've ever tasted)
- 1/2 tsp ground ginger (We also have a great ginger in the Spice for life set)
- 1/4 tsp nutmeg
- 1/8 tsp allspice
- 1/8 tsp clove
- Pinch of salt (Try Demarle at Home Sel gris sea salt)
- 3/4 cup sugar
- 1/2 cup vegetable oil or canola oil
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups shredded carrots
- 1/2 cup crushed pecans 
- 1/2 cup unsweetened shredded coconut
- 1/2 cup  small chocolate chips
- 1/2 cup dried raisins


For the icing:

- 5 oz cream cheese
- 1 cup powdered sugar
-1 tsp vanilla extract
- 1 tbsp milk
- 1/2 cup chocolate


Preheat your oven to 350 F.
Use a 9-inches mold. I use Demarle large round mold,  flower mold, or  bundt cake. Do not use a too big mold.

Put the dried raisins in a bowl filled with warm water.
Mix together the flour, all the spices, salt, baking soda, baking powder,
In a second bowl mix the sugar, oil and vanilla extract, until well combined, then add the eggs, mix well. Add all the other ingredients, and the flour mixture. Use a spatula or a wooden spoon. Do not over mixed.

Pour the batter into your mold and bake it at 350F for 35 min or until a toothpick comes out clean.
Let it cool completely before unmolding.

Prepare the frosting by combining cream cheese, powdered sugar and milk, until it's perfectly smooth.
You can now frost your cake.

Melt the chocolate in the microwave or in a saucepan.
Let it cool a little bit before placing it in a pastry bag or "ziploc". If you use a ziploc bag cut a corner but not more then 2 milimeters.

Find the center of your cake, put a chocolate dot and then draw circles all over the cake. 
To draw the spider web, take a toothpick trace a line starting from center going to the edge, then from the edge to the center and continue on.
And Voila! You have a beautiful carrot cake perfect for Halloween!
